How do I clean it?

I have only been able to use my D'BakerAid for a week now. Due to an accident, I had. The bagels turned out great so moved onto Sourdough Bread which turned out pretty good. It was soft inside but, a little damp. I let it dry out overnight. Will try it this morning.

Regarding the sourdough being a little damp inside: letting it sit overnight can help the crumb finish setting, but for your next loaf, make sure the bread is baked completely through and then allow it to cool fully before slicing. Sourdough continues releasing moisture and its crumb structure continues setting as it cools, so cutting it while still warm can make the inside seem wetter or slightly gummy even when the loaf looks beautifully baked outside.
If it is still noticeably damp after completely cooling, please contact us with the recipe you used, your baking temperature/time, and ideally a photo of the cut crumb. We can help determine whether it needs a little more baking time or whether hydration/fermentation should be adjusted.

Probably not the appliance and more the baker. Not sure what went wrong. Bread dense maybe over proofed? Never was able to get a good shape. Still not sure if it was o er or under proofed.

Please don’t assume you simply did something wrong — from what you described, we need a little more information to determine whether the dough was under-proofed, over-proofed, or whether something earlier in the recipe affected its structure.
D’BakerAid controls the fermentation environment, but time alone should never be used as the final indication that dough is ready. Flour strength, hydration, yeast quantity, dough temperature and the recipe itself all influence how the dough develops.
For your next yeast bread, we recommend following the complete D’BakerAid process:
Stage 1 — Yeast Fermentation
Place the recipe liquid, yeast, 1 tablespoon sugar and 1 tablespoon flour in the 2.5 L bowl. Select the correct program for the yeast you are actually using — Dry, Fresh or Instant — and allow D’BakerAid to complete the yeast fermentation stage. This helps establish that your yeast is active before it goes into the full dough.
Mix and knead
Continue with the remaining recipe ingredients and knead according to the recipe. Proper gluten development is very important; D’BakerAid controls fermentation and proofing conditions, but it does not replace the mixing/kneading step.
Stage 2 — Dough Proofing
Place the kneaded dough in the covered 4.5 L bowl and choose the appropriate Dough program: White, Mixed, Whole Grain or Sourdough.
Then watch the dough itself. The programmed time provides controlled conditions, but the dough’s development is the final guide. If it has not risen sufficiently, give it additional time. If it has already reached the appropriate rise earlier, don’t continue proofing simply because there is time remaining.
For some breads, pizza and other shaped doughs, the recipe may also call for a second proof after shaping. That is separate from the first proof and is important for the final structure.
If you were making traditional sourdough, the process is different: you normally skip Stage 1 when using an active starter at peak, mix/knead your dough, then use Dough → Sourdough for controlled bulk fermentation. Sourdough commonly requires considerably longer fermentation, and readiness should be judged by dough development rather than a fixed short time.
We’d really like to help you get the result you expected. Please send us the exact recipe you used, flour type, yeast or starter type and quantity, and approximately how long you proofed it. If you have a photo of the dough before baking and of the crumb after baking, even better. From those details we can usually identify where the process went off track.

Some of my creations using the DBaker Aid. I have made 8 loafs in 2 days. Mountain Dew with nerds, strawberry cheesecake. Croissant loaf, crispy French onion x2, 2 traditional, and pull apart garlic bread. My next bake is jalapeño cheddar but going to add habanero cheddar for a change.
