Why Your Sourdough Behaves Differently Every Week

For many of us sourdough is the bake we care about most and trust the least. We feed on the same schedule, mix at the same hour and fold at the same spacing. And the dough still writes its own timetable. When you have kept a starter alive for years, that wears you down.

Ask any group of sourdough bakers how they handle a cold kitchen and you hear the same list. Oven with the light on. Bowl on top of the fridge. Heating pad under a towel. Airing cupboard. A cooler box with a jar of warm water.

These workarounds share one flaw. Not one of them holds a number the way a controlled proofing bowl does. What Is Actually Holding the Temperature

A long ferment asks more of a heater than a short one does, so it is fair to ask what is doing the work. Here is what sits under the glass top of the base unit, described plainly.

Four sensors sit inside it, reporting to a small control board that compares what they read against the number you set and switches the heat accordingly. The components are deliberately ordinary: a PCB, an NTC thermistor and a thermostat. Read, compare, adjust, repeat, hour after hour.

You choose the temperature. The adjustable range on the kit runs from 24°C to 50°C, which is 75°F to 122°F. Each press moves it by one degree Celsius or five degrees Fahrenheit, and holding the button for two seconds steps in fives and tens instead. Most settings run from one minute to 120 minutes. The sourdough setting is the exception, and it runs in hours.

A scale is built into the top plate, accurate to one gram and rated to ten kilograms, so a levain can be weighed straight into the bowl. Lift the bowl off for three seconds and the unit pauses. Set it back down and it resumes within three seconds, so a round of folds costs you nothing.

The bowls are sized for their jobs: D’Yeast holds 2.5 litres, D’Dough holds 4.5 litres, and the D’Steamer holds 700 millilitres. Every one has a lid, and over a ferment measured in hours the lid is what stops a skin forming on the surface.

Read the sourdough row on its own. It sits at 27°C, which is 80.6°F. Its default run is five hours, not thirty-five minutes, and it is adjustable out to twenty-four. That single row is written for the way you actually bake.

Now think about your kitchen over those same hours. It is not one temperature: cooler at seven in the morning than at four in the afternoon, cooler in January than in July, and the counter by the window is not the counter beside the oven. Your dough does not read your schedule; it reads the heat around it and answers, and over a long bulk it has hours in which to answer. That is why the same recipe behaves differently on different days — not because your folds changed, but because the room did.
